Seasonality in coffee
The coffee selection for Rituals follows the seasonal harvest patterns across the coffee belt. We source coffee with intent, creating balanced experiences that illustrate essential concepts from the world of coffee.

This month
Both of this month’s coffees come from Ethiopia, one of the most intriguing coffee countries we work in. The rich culture and history of the Ethiopian people lead to a complex mosaic of impressions across the country, where travelling is a true privilege. This tapestry of ancient rural cultures has been maintained due to Ethiopia’s status as one of the only countries in Africa which was never officially colonised.
This month’s coffees are shaped by both the unique conditions and the long-standing culture of coffee production here, where a myriad of heirloom varietals grow in biodiverse systems to produce complex and delicious cups. Gogogu is grown in Guji, with a deep peach sweetness and floral jasmine in the cup, while Kachara has aromatic tropical fruit character, with softer magnolia florals.

Ethiopia
This month we’re welcoming coffees from Ethiopia, a country we’ve travelled to many times.
Gogogu
Gogogu is a washed lot grown in Guji; we find a deep sweetness, reminiscent of tinned peaches, underpinning the aromatic top notes of jasmine and citrus
Kachara
Kachara was naturally processed in Sidamo, with a deep and complex fruit character, reminiscent of aromatic tropical fruit, elements of stone fruit and subtle red berries.

Last month’s subscription was part of our first release of the season from Honduras, with lots from our partner Erin Moreno. This year, we purchased our long term favourite Parainema lot, with a crisp and bright cup, alongside a ripe and rich Pacas, both with the same anaerobic pre-fermentation protocol.

Farshad Fanzankia
Farshad is a long term friend. He has known Paw Gissel for nearly a decade, travelling together and sharing many mutual friends in creative Copenhagen. We met again in Farshad’s Copenhagen atelier; immersed in his vibrant universe, a stark contrast to his calm and open nature.
In Rituals, we witness this contrast first hand, a slow conversation with a dear friend who continues to inspire us.

We seek inspiration both within and outside our field, collaborating with talented creatives who share our drive, passion and curiosity about various aspects of life. Each of these connections, however fleeting, has shaped how we create and share coffee experiences. Rituals is our tribute to these connections, a virtual journal that captures the ephemeral moments where everything clicks, where a vision is sparked and the perspective shifts. A memoir in constant motion, where each new notion glints in the glow of all that came before.
