The coffee selection for Rituals follows the seasonal harvest patterns across the coffee belt. We source coffee with intent, creating balanced experiences that illustrate essential concepts from the world of coffee.
This month
This month’s subscription signals the return of Ecuadorean coffee to our line up. Juan Peña produces some of the most exciting coffees we have tasted from Ecuador, a wide variety of expressions, mainly focussed on the Typica varietal. During our visit in November 2021, we were captivated, both by the beauty of the region, but also by Juan’s exacting approach to quality coffee production. From varietal selection, plant nutrition and disease prevention, to fermentation, drying and sorting, each step is approached with intention and dedication. Through CafExporto, Juan has been able to assist nearby producers in increasing their quality using his methods, resulting in the Chito community project. We hope you enjoy both the floral and sweet Washed Typica and the wild and aromatic Yeast Fermented Typica this month.
Ecuador
This month, we are excited to share coffees from Juan Peña’s project CafExporto with you, now for the fourth year.
Chito Washed Typica
The first coffee is a washed Typica, with inherent floral notes and a sweet and round structure in the cup, as we have tasted from the Chito lots we have purchased over the years.
Chito Yeast Typica
The second coffee is a yeast fermented Typica, retaining the floral notes inherent in the varietal, while unveiling some rich and wild fruit notes from the chosen yeast strain.
Both of last month’s coffees came from Ethiopia, one of the most intriguing coffee countries we work in. The rich culture and history of the Ethiopian people lead to a complex mosaic of impressions across the country, where travelling is a true privilege. This tapestry of ancient rural cultures has been maintained due to Ethiopia’s status as one of the only countries in Africa which was never officially colonised.
Farshad Fanzankia
Farshad is a long term friend. He has known Paw Gissel for nearly a decade, travelling together and sharing many mutual friends in creative Copenhagen. We met again in Farshad’s Copenhagen atelier; immersed in his vibrant universe, a stark contrast to his calm and open nature.
In Rituals, we witness this contrast first hand, a slow conversation with a dear friend who continues to inspire us.
We seek inspiration both within and outside our field, collaborating with talented creatives who share our drive, passion and curiosity about various aspects of life. Each of these connections, however fleeting, has shaped how we create and share coffee experiences. Rituals is our tribute to these connections, a virtual journal that captures the ephemeral moments where everything clicks, where a vision is sparked and the perspective shifts. A memoir in constant motion, where each new notion glints in the glow of all that came before.
