Seasonality in coffee

The coffee selection for Rituals follows the seasonal harvest patterns across the coffee belt. We source coffee with intent, creating balanced experiences that illustrate essential concepts from the world of coffee.

This month

This is our seventh year buying coffee from Jorge Raul Rivera. Raul is a second generation coffee producer, based just outside the town of La Palma, in the far north-west of El Salvador, close to the border with Honduras. His farm, Finca Santa Rosa, is located at around 1550 masl on the slopes of El Pital, El Salvador’s highest point. The farm is planted mainly with the famed Salvadoran varietal Pacamara, and has produced some of the country’s highest quality coffees in recent years, winning the Cup of Excellence in 2014, 2017 and 2019, all with the Pacamara varietal.

Both of this month’s coffees are Pacamara lots from Santa Rosa, a crisp and floral washed lot, and a deeper and heavier natural.

In the washed lot, the floral notes of the Pacamara shine, backed up by juicy blood orange and milk chocolate.

Similar notes follow into the natural, but with a deeper and richer character; orange cream liqueur and cooked red berries, followed by a finish with rich notes of dark chocolate.



Ethiopia’s endemic coffee systems lead to a much higher level of biodiversity than in modern coffee production in much of the rest of the world. This is partly due to the forest system, and partly down to the genetic diversity of the coffee plants themselves. There are thousands of ‘heirloom’ varieties growing in Ethiopia; all descended from wild cross pollination between species derived from the original Arabica trees. Maintaining these systems is important, both within the coffee industry, and in the context of wider biodiversity and sustainability concerns. Our primary partners in Ethiopia, Moplaco, have made it their mission to inform of the destruction of these systems, and to continue supporting the communities they work with in order to make coffee a profitable and attractive business for smallholder farmers.

Both of last month’s coffees came from Moplaco, both a crisp and bright washed lot and a rich and ripe natural from the Bensa Logita station in Sidamo.

Farshad is a long term friend. He has known Paw Gissel for nearly a decade, travelling together and sharing many mutual friends in creative Copenhagen. We met again in Farshad’s Copenhagen atelier; immersed in his vibrant universe, a stark contrast to his calm and open nature.

In Rituals, we witness this contrast first hand, a slow conversation with a dear friend who continues to inspire us.


We seek inspiration both within and outside our field, collaborating with talented creatives who share our drive, passion and curiosity about various aspects of life. Each of these connections, however fleeting, has shaped how we create and share coffee experiences. Rituals is our tribute to these connections, a virtual journal that captures the ephemeral moments where everything clicks, where a vision is sparked and the perspective shifts. A memoir in constant motion, where each new notion glints in the glow of all that came before.
