Søly was founded by Helle and Gustav. They began missing the high-quality coffee, freshly baked bread and good food they had gotten used to in Copenhagen. They took matters into their own hands and opened the place, that they themselves had been missing.
Gem
Gem, a standout destination in New York’s Lower East Side, opened its doors in 2017 on Broome Street. Initially launched as an ambitious fine dining project, it quickly became known for its attention to detail, with coffee playing a small but important role from the beginning. Over the years, Gem has continuously evolved, adapting to the changing landscape of the city while maintaining its focus on quality and neighborhood connections.
Raw Studio
Raw Studio ist ein warmes und einladendes Café, das von Bren, einer begeisterten Anhängerin gesunder Ernährung, geführt wird.
