Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm.

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. The Braun Valle Family

Finca Concepción dates back to 1890, when it was primarily a cattle farm with a small area planted with coffee. The farm takes its name from the Catholic feast of the Virgin of the Kings, celebrated on 8 December in honour of the conception of the Virgin Mary. More than a century ago, Vanessa Braun Valle’s ancestors purchased the farm from a Spanish family who had settled in Mataquescuintla to focus on coffee and cattle production. Since then, the Braun Valle family has expanded coffee production fivefold, continually renewing the farm’s plant material. Some of the original Bourbon trees from the earliest plantings still stand today.

Finca Concepción

Located at 1770 masl in Jalapa, the farm has loamy clay soils, temperatures of 16–28°C and around 2000 mm of annual rainfall. Cuje, Gravilea and Mundani trees provide shade for the coffee plants, and the family adjusts the shade throughout the year to suit the climate.

The annual cycle begins in April with pruning, soil treatment and fertilisation, followed by four to six foliar applications throughout the year. The family avoids herbicides wherever possible and hand-picks ripe cherries at harvest. While the farm has access to natural spring water, it uses recirculated water from depulping onwards to minimise the risk of contamination.

Washed Pacamara

The cherries are picked at peak ripeness and depulped at the mill before fermenting for 36 hours, followed by a soak in clean water. The parchment is then sun-dried on cement patios for around 15 days, spread to a depth of approximately 18 cm and turned frequently to ensure even drying. The resulting cup offers a clear expression of the Pacamara variety, with floral aromatics, notes of stone fruit and melon, and a spiced finish.
