Brewing Advice
Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm.
Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.
We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.
Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Luis Aguirre
Luis Aguirre has been farming coffee here in Villahermosa for many years, but moved to growing the Pink Bourbon varietal earlier than many around him. Many in this region grow high-yielding hybrid varietals; without the access to the high-end specialty market, they simply rely on the advice given by the national coffee growers’ federation, the FNC. Their approach leads to more intensive agriculture, with a greater use of chemicals and a lower quality final product, that can be reliably blended into ‘Café de Colombia’ and sold across the world. This commoditisation of coffee aims to remove the high notes, the beautiful accidents that result in the finest cups, but also leads to a steady and stable income; the FNC guarantees to buy any coffee that fits the Café de Colombia mould. But when Luis heard stories from Huila of much higher prices; he sought out Bourbon Rosado seeds, and took a leap of faith.
CDNT
Luis was then introduced to CDNT by our long term friend Yesid Flores. CDNT exist to find these types of producers; the rebels, those that create the top coffees of the region, but don’t fit the traditional mould. The potential of this area is incredible, very high altitude, excellent conditions, and a motivated population of smallholders. The combination of this and a very high quality cultivar leads to an excellent cup. Luis delivered this lot while we were building the larger Oromazo lot, and made itself heard with its cleanliness and clear character. Luis stands as an example for the community; his hard work and shrewd risk taking has paid off, leading to excellent coffee, and a higher price for him.
