Brewing Advice
Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm.
Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.
We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.
Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Vargem Alta
Rodrigo Mazzoco produces coffee on his family’s small property in Vargem Alta, in the mountainous region of Espírito Santo. Having grown up around coffee, he began focusing more closely on specialty coffee at a young age, gradually developing the farm towards smaller, more controlled lots.
Vargem Alta has a distinctive climate, with warm days followed by significantly cooler nights. This creates a profile that stands apart from many more familiar Brazilian coffees. We find a fresh acidity and pronounced structure here, while retaining the sweetness and rich texture we associate with Brazil.
Rodrigo works on a small scale, with much of the production carried out manually. He has built his own covered drying structure with raised beds and installed pulping equipment on the property, giving him control over each lot throughout processing.
Honey Red Catuaí
The cherries are picked by hand at full maturity before being pulped in water. The mucilage remains around the parchment, and the coffee is moved directly to raised beds without being submerged in water.
Here, the coffee dries slowly under cover, with air circulating beneath the beds to create an even drying process. Once the correct moisture level is reached, the coffee is moved to a traditional wooden resting silo, known locally as a tulha, where it stabilises before hulling.
Rodrigo keeps each microlot separate and traceable throughout this process. In this lot, the Honey process and Red Catuaí create a floral and rich expression, with notes of papaya, peach in syrup and sugarcane molasses.

This coffee is a collaboration between La Cabra and Acervo, built around a shared approach to sourcing distinctive coffees and working closely with producers. Acervo’s relationships and experience in Brazil give us access to small producers and lots that would otherwise be difficult to reach, while our shared focus on quality allows us to select coffees with a clear expression of their origin.
Together, we tasted through the harvest in search of coffees that stood apart. This Red Catuaí was one of the most distinctive lots we tasted, showing the fresh and structured character we value in coffees from Vargem Alta.
