In the heart of North London's Highbury neighbourhood, Profile has quickly become a local favourite, thanks to Hugo’s vision and a commitment to showcasing exceptional coffees. Driven by a distinct lack of specialty coffee spots in the area, Hugo opened Profile with a simple yet ambitious goal: to challenge how locals thought about and tasted coffee.

At Profile, they serve our coffees both on espresso and filter, proudly featuring an ever-changing seasonal lineup from La Cabra. Recently we’ve been proud to recommend Profile as the first place in London where coffee lovers can experience our coffees.  


At Profile, the brewing process is as meticulous as it is passionate. When brewing espresso and filter the team precisely controls each shot and batch, while the specially treated RO water ensures that every brew and espresso is consistently flavorful. Hugo mentions ‘While espresso needs to deliver in milk and black, filter stands alone, leaving the barista to truly highlight its attributes’. 


This thoughtful approach not only elevates our coffees but also turns each serving into a lesson on the depth and complexity possible when excellent raw material is treated with care. Hugo explains that when brewing batch brew, they aim to be the best in North London ‘We brew with a MoccaMaster so we can brew smaller batches, and have more control over each batch. We use 85-100ppm RO water which helps us deliver superb tasting filter.’


The seasonal changes in our line-up regularly bring new coffees through the doors and onto Profile’s menu. Chelbesa Washed was a popular choice, ‘It delivered complexity in layers. Wonderful soft yellow stone fruits such as Apricots with a delicate yet bright Lime rind acidity. I think the cleanliness of the coffees from La Cabra make highlighting their profiles a delightful experience’ explains Hugo.

During the London Coffee Festival, we arranged for Hugo and the team to feature limited releases such as Hacienda La Papaya Oak Barrel Typica and Elida Natural Geisha.
