Gem
Gem, a standout destination in New York’s Lower East Side, opened its doors in 2017 on Broome Street. Initially launched as an ambitious fine dining project, it quickly became known for its attention to detail, with coffee playing a small but important role from the beginning. Over the years, Gem has continuously evolved, adapting to the changing landscape of the city while maintaining its focus on quality and neighborhood connections.

After navigating the challenges of COVID-19, Gem reinvented itself as Gem Wine—a more approachable concept that preserved the fine dining roots but in a relaxed, community-focused form. This transition marked the beginning of Gem’s collaboration with our company, introducing specialty coffee and bread into the experience. The partnership reflects Gem’s dedication to sourcing top-tier products, ensuring that every detail, from wine to espresso, is handled with care and expertise.

Now located on Forsyth Street, just around the corner from its original site, Gem continues to grow and innovate. Their ethos of constant evolution is apparent in everything they do, from upcoming projects—a new fine dining concept—to Flynn’s personal craftsmanship seen in the restaurant’s woodwork and design. Additionally, a home store and café recently opened at 181 Mott Street.

Community plays a vital role in Gem’s identity. As Gem Wine settled into the Lower East Side post-pandemic, it forged strong connections with its neighbors and local businesses. Whether stopping by our East Village location or working with nearby shops, the spirit of collaboration is woven into the fabric of Gem’s daily operations.

In keeping with this collaborative spirit, Gem’s coffee program, in partnership with our company, mirrors their approach to wine—simple, high-quality, and thoughtfully sourced. Espresso is their focus, brewed to precise standards with La Marzocco equipment: 17.5g of coffee, a 30-second extraction, yielding 36-37g of espresso. Our Brazilian lots have been particularly popular, offering a smooth and balanced experience for guests.
Our bread selection also complements Gem Wine’s menu beautifully. In a creative twist, leftover bread is fermented and reduced to make a marmite-style butter, served alongside fresh loaves—a reflection of Gem’s inventive, resourceful culinary approach.
As Gem continues to evolve, this partnership highlights a shared commitment to quality, community, and creativity, offering locals a dining experience that’s both refined and welcoming.
