Brewing Advice
Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm.
Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.
We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.
Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Doña Daisy
Doña Daisy is a small plot directly next to the house of Daisy and Jose ‘Pepe’ Fallas, effectively a miniature coffee farm in their garden. After spending most of their working lives breeding pedigree dogs, the couple decided to start a small passion project in their retirement, and set about educating themselves in the art of coffee production. Their small plot, located at 1700 masl in the Central Valley of Costa Rica, grows only SL28, Typica and Geisha, and all of the farm work is undertaken meticulously by Pepe and Daisy themselves.

Due to the close connection the family feel to the plot, and its literal proximity, it was named in Daisy’s honour. This small area of the farm has only been in production for 8 years, and this is the third time we have bought a Geisha lot from the couple.
Due to the meticulous care that these plants have received, and Pepe and Daisy’s close attention to processing, this is an excellent clean example of a honey Geisha, with an excellent balance between heavier character from the process, and the floral and citrus characteristics that the varietal is known for.
In the cup this means jasmine aromas, and some classic heavier ripe fruit characteristics, with flavours of ripe berry jam.
