Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Claudio Vinicius

Claudio Vinicius Pimentel comes from a long line of coffee producers and learned much from his father, José Claudio Pimentel, producer of coffees from Sítio São Bartolomeu, a farm that has been in the Pimentel family since the 1940’s. José Claudio also learned from his father and is proud to pass this knowledge on to his son.

Fazenda Paraguai is located in the São Bartolomeu micro-region, near to the city of Lambari in Sul de Minas. The conditions on the farm, with high altitude, fertile soils and excellent varietals, mean it has great potential to produce high quality. The farm is rather small for Brazilian standards, at 20 hectares, with only 16 planted with coffee; the rest is left as reserved nature.

Natural Catuai

This lot is harvested from Claudio’s Catuai trees, and processed as a natural. This leads to a soft character of cherry in the cup, on a base of creamy milk chocolate and sweet caramel.
