Café Caractère

In the lively 11th arrondissement of Paris, known for its excellent wine and food venues, we at La Cabra have been involved with Café Caractère, a welcoming spot that Patricia opened in June 2022. 

She launched this new venture in partnership with Matthieu, owner of i/o, a long-standing La Cabra partner in Paris. 

With Matthieu's experience, Patricia's passion and a shared commitment to quality, Café Caractère has seamlessly integrated into the vibrant Paris coffee scene.

Since opening, Café Caractère has quickly become a favorite spot for coffee lovers and neighborhood regulars. 

Supporting Patricia day to day is current lead barista Daniel originally from Aarhus, Denmark. They both combine their passion for coffee and meticulous approach to help maintain high quality standards. 

He especially loves making brewing pourovers at work or at home, as a sense of calm to start the day.

Pourovers at Café Caractère are more than just a method of brewing coffee; they are a showcase of what Daniel calls the "grand cru" selection from La Cabra. 

The Hacienda La Papaya selection, for instance, has been particularly well-received, with its diverse flavors and exceptional quality, making it a standout choice for patrons seeking a memorable experience.


Daniel’s brewing process is a ritual in precision. Using 15 grams of La Cabra's coffee to 250 grams of water heated to 93°C, he pours in four stages, each pour separated by 30 seconds.

He uses an EK43 grinder set to 14, alongside an Acaia Pearl Scale and Brewista spout kettle, aiming for a brew time of 2 minutes and 30 seconds. 

The consistency and quality of each cup are ensured by 60 ppm water provide via a Conserv 75e reverse osmosis filter from Pentair.

For Daniel, and indeed for Café Caractère, a pourover isn’t just about the coffee. It's about the experience - creating a moment of peace for the customer, a pause in the day to explore the refined flavours of our seasonal lots.

It's about connecting over a shared passion for quality, a philosophy deeply ingrained in both La Cabra and Café Caractère.
