Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm.

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Chevas Coffee Estate

The Chevas family's story in Boquete began with José Luis's grandfather, Luis Víctor Chevas, who started farming in Alto Chiquero in the 1970s. He initially grew onions and potatoes before planting larger coffee lots in 1996. In 2016, at the age of 18, José Luis founded Chevas Coffee Estate on the family land, with a focus on specialty quality and precise, lot-specific processing.

Rather than following a single house style, Chevas separates and processes each lot according to its own character, working across washed and natural methods and finishing many lots in a climate-controlled Dark Room. The estate's plots sit between 1500 and 1750 masl in the cool, humid highlands of Boquete, spanning three distinct microclimates: Alto Chiquero, El Salto and Alto Quiel. Organic-rich volcanic soils and cool temperatures at altitude slow cherry maturation, supporting sweetness, acidity and structure in the cup.

Washed processing

For this lot, the fruit is removed before drying, giving the cup a clear expression of the Geisha variety and placing greater emphasis on its acidity and floral character. Chevas finishes many of its washed lots in a climate-controlled Dark Room after a short phase on raised beds in the sun, while others are dried fully on raised beds.

Geisha

Geisha originated in western Ethiopia and rose to fame in Panama after its Best of Panama debut in 2004. It is known for its jasmine-like aromatics, delicate structure and complex citrus and fruit character. This lot is the cleanest and most delicate expression of the Geisha variety, with notes of hibiscus, peach, orange zest and vanilla.
