Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Luiz Fernando de Oliveira

Luiz Fernando always dreamed of his own land. In 2005, he sold his home in Batatais, São Paulo, and began again in Pratápolis - eight hectares nestled in the hills of Minas Gerais, two already planted with coffee. This was the plot he called Agua Limpa.

At first, he planned for dairy, but his father’s love for coffee had already been passed on, drawing him in. With few resources, Luiz and his wife Valéria worked the land by hand, weekends spent among young trees, supported by neighbours and a quiet persistence.

Each step, from planting to harvest, was done manually — a reflection of care, not convenience. While still tiny by Brazilian standards, Luiz Fernando now has 9 hectares planted with coffee.  This means that in 2025, for the first time, the harvest will be mechanised. A careful shift, made with hope that efficiency won’t mean compromise.

This cup shows that no such compromise has been made. This natural Red Catuai showcases the Brazilian profile well, with a dark chocolate and hazelnut base punctuated by soft ripe cherry.
